So anyway, once again this year we were able to get a babysitter for little EricBarton and we're having some company over. I don't think it would be appropriate for the guests though, that and the wife has to really watch her carbs, I think that might be a little overboard. That way you can make stuff healthy for your wife and stuff you and your guest eat. That way everyone wins. GreenBeans Posted December 30, 2005 Share Posted December 30, 2005 Chicken in Sherry Wine Sauce - serve 4 4 chicken breast halves, boned 1/3 cup + 3 tbsp olive oil, divided Salt and pepper, to taste 1 1/2 cup bread crumbs 1/3 cup Romano cheese, grated 1 small onion, thinly sliced 8 mushrooms, thinly sliced 1/4 cup sherry wine 1/4 cup water Place 1/3 cup oil and, if desired, pepper in a baking pan, tilting so oil covers the bottom. Place bread crumbs, salt, and cheese in a bowl and mix well. Roll each piece of chicken in the oil, then in the crumbs. Pour excess oil out of the pan and put chicken in the pan. Bake until lightly browned, 30 to 40 minutes, at 350. In a small skillet, saute onions and mushrooms in 3 tbsp oil until tender. Add wine and water to skillet and mix. You can have a variety of different things and all should be happy. I would love to taste your food one day. I need some seafood or pasta myself. Chicken Marsala is excellent though. It's not as hard as you would think, and it is great with some nice potatoes (or a rice pilaf), fresh geen beans and some crusty bread. A nice, dry Bordeaux or Cotes du Rhone and you'll be in gastronmic heaven. Calvados for an after-dinner drink will make the night memorable.
