The problem is what if Fields or Wilson becomes a clear franchise guy and we backed off from being able to take them. Even if he takes Fields and Wilson becomes great (or vice/versa) people can live with it... but to trade out for a couple more picks (when we're already loaded with picks) and simply pass on those guys would be crazy. If any of these guys hit and Darnold likely continues to be Darnold, then he gets kicked out of the big apple pronto. Deciding to stick with the worst QB in the NFL who based on historical trends is like 5% likely to be any good instead of using a top 3 pick to grab a guy in a QB heavy draft is as risky as you can get.
