Roman is better than Parmesan

How dare you. Parmigiano-Reggiano is the king amongst cheeses. Pecorino Romano is pale by comparison. Further, one is a cow's milk cheese (Parmigiano), while the other is made from sheep's milk (Romano). Can't tell that I was born near Parma, can you?

Don't get me wrong, I love them both. I just think reggiano is overrated as well as overpriced.

A little off topic, but give me a stick of pepperoni, imported provolone, Greek and Scilian olives with a six pack and I'm in heaven.

I'll take everything you mentioned but the olives. They're worse than artichokes.

If you want a better substitute for Reggiano--IMO--try Asiago. I find Romano to be too sharp, with no depth. Whatever you do, never--upon penalty of death (of your taste buds)--buy domestic versions of either. They are awful.

Theres a reason why Reggiano is called the king of Italian cheese.

Also, if you have an option, try and get the cheese where the milk was taken in the Spring. This tastes best because the grass that the cows graze on is optimum.

Asiago is a great cheese as well, but the closest substitute for Parmigiano Reggiano is Grana Padano. The "grana" term has to do with that crunchy, crystaline aspect of the cheese that is so great.

I could go on, but suffice to say that there are so many choices that there is no "best" just favorites.

For a great antipasto, try a great Provolone, Reggiano, and fresh Ricotta drizzled with honey & a little black pepper.

I was in Parma on Tuesday. The antipasto was a huge plate of cold cuts. About five kinds of prosciutto and sausage. Best sliced meat I've ever tasted. It's insane there. The old lady babbled for about five minutes about the difference between them, but I was having trouble following her. She noticed, pointed to one and said "this one is the best". She wasn't kidding. Thankfully there was no lardo this time.
