They are better, and fresher. Count yourself as lucky. You will never eat better eggs than just fresh from the hens. Another side benefit is that if your friend's chickens are free of salmonella, you may eat the eggs raw if you choose without any of the potential food-borne illness. We used to go up in the Watchung Mountains to a place called Wagner's farm and buy fresh creamy chocolate milk and egg nog right from the farm. Sometimes there would be egg yolk on the rim of the old time milk bottles-we never had to worry about Sal Minella...is he in the MAFIA or something?
