I would always--I repeat, always--use a cutting implement forged by the good folk at Messermeister (Allemagne) or Misono (日本), specifically the UX-10 line. Of course one may employ inferior grades of knives, but the result will be less than stellar and--more importantly--prone to shredding rather than making clean, attractive cuts. Going into that draft the talk was Miller rd 1 and Nugent rd 2. We got both and moved down. Neither panned out but neither did heath Miller who everyone wanted.
